The Cuisine

The kitchen serves Neapolitan-style pizza made with a double-fermented 48-hour dough using Italian strong flour and sourdough, then baked in about 90 seconds in refractory stone wood-fired ovens built in Naples. Pizzaioli stoke the ovens each morning to keep them at around 500°C. The carta lists classics such as Margherita, Marinara, Diavola, Prosciutto e Funghi, Quattro K, Bianca al Prosciutto, La Vera Carbonara and Calzone, alongside antipasti like burrata, polpette della nonna and parmigiana di melanzane.
