The Story

Parking Sotano sits in the basement of Parking Pizza's Marimon location, created by Marcos Armenteras and Berta Bernat -- the same team behind Parking Pizza, which opened in 2015. The concept is a stripped-down steak bar doing one thing exceptionally well: charcoal-grilled entrecote with an intentionally short menu. The subterranean space was designed by Lekuonastudio and architect Antonio Spalletta, with long communal wooden tables flanked by low stools. Following Marcos Armenteras's death, Berta Bernat continues to lead the Parking group.

The Cuisine

The menu centres on charcoal-grilled entrecote -- a 500g European cut for two at €52, or a 500g Galician cut at €62, with a 1kg T-bone at €112 and a 200g Galician sirloin at €32. Steaks are sourced from European and Galician cattle and cooked over wood and oak charcoal embers that stay live throughout service. House sauces: bearnaise, café de París, blue cheese and onion, chimichurri. Sides include French fries, gratin of potato with leek and gruyère, eggs with fresh truffle, grilled artichokes, charcoal-roasted sweet potato with gorgonzola, and creamed spinach. Starters feature oven-melted Extremaduran raw sheep's milk cheese, grilled avocado with tomato tartare, and Black Angus cecina. Around €45 per person without drinks.

The Team

Head chef Gloria Márquez, originally from Venezuela, runs the meat preparation; Nacho Dambolena works the charcoal grill. The restaurant was founded by Marcos Armenteras and Berta Bernat, the team behind Parking Pizza.
