The restaurant buys 100% organic ingredients from local agroecological producers, with direct, stable, and fair relationships with 18+ named local farmers. They partner with Abono km0 to compost organic waste into soil amendments, closing the circular economy loop. Everything is made in-house, including bread and mustard.
