The Story

Garum Conserves i Vins opened in late 2024 on Carrer de Vilarós in Sant Gervasi, a small street next to the Mercat de Sant Gervasi. The project is owner Ricard Torres's first solo venture after a long career in Barcelona hospitality - 17 years at Grupo Tragaluz managing multiple restaurant concepts, plus experience with Grupo Isabella's - and 30 years total working across the city's restaurant scene. Earlier in his career Torres trained under Jean Paul Vinay, the chef who earned two Michelin stars for El Bulli in the pre-Ferran Adrià era. Garum was converted from a former garage into a modern bodega-bistro hybrid that moves between wine bar, tapas and vermouth bar, full bistro kitchen and a midday daily menu.

The Cuisine

The kitchen is market-driven and plays across Catalan, Spanish and international registers. Signature plates include croquetas de fricandó, curried chicken croquettes, tuna with mushroom escabeche, spicy steak tartare, bacalao buñuelos with romesco, pastrami panini, calamares, canelones, and callos. Traditional Catalan dishes like meatballs with cuttlefish and salted cod with samfaina share the menu with international small plates and charcuterie. A €16 weekday lunch menu combines appetizer and main course. Expect around €30 per person at dinner. The wine programme is the other half of the concept: nearly 200 references sourced globally, with bottles available at shop prices plus an €8 corkage fee when consumed on-site.
