Shoronpo
Shoronpo is a small Japanese counter in la Vila de Gràcia built around steamed shoronpo soup dumplings and ramen. Chef Keita Tanaka reopened the project here after closing the original FAN Shoronpo on Carrer de Sèneca, bringing across the same recipes and the same focus on hand-folded dumplings and tantanmen.
Background
About Shoronpo
The Story
Shoronpo is the Gràcia soup-dumpling and ramen shop that succeeded the original FAN Shoronpo on Carrer de Sèneca. Chef Keita Tanaka opened FAN Shoronpo in 2015 after roughly 15 years making shoronpo in Japan, and relocated the project to Carrer del Dr. Rizal under the shorter Shoronpo name with the same recipes.
The Cuisine
The kitchen is built around two specialities: shoronpo, the Japanese name for xiaolongbao soup dumplings, and ramen. Soup dumplings are folded and steamed to order, with fillings that include pork, foie gras, and jamón Ibérico. Ramen leans on a signature tantanmen with a thick sesame-and-chilli broth and minced pork.
The Team
Chef Keita Tanaka leads the kitchen, which operates from an open pass visible across the small dining room. Service is counter-led, with a tight team handling both dumpling folding and ramen assembly in view of guests.
