The Cuisine
The kitchen is built around a single night tasting menu that rotates monthly with the market, featuring around eleven original dishes. Flavour combinations lean bold and cross-referential, Catalan pantry staples such as Santa Pau beans, red mullet and sobrasada sit alongside pil pil, sabayón al jerez and Sichuan accents. Traditional dishes are given a personal, modern treatment rather than straight reproduction.
