The project was conceived by Paulo Airaudo, the Argentine-born chef who had already earned two Michelin stars at Amelia by Paulo Airaudo in Donostia-San Sebastián. For Aleia, Airaudo brought in Rafa de Bedoya, a Jerez-born chef raised in the Basque Country's professional kitchens before specialising in French cuisine. Within a year of opening, in November 2022, Michelin awarded the first star. The second followed in November 2025. The restaurant also holds a Sol from Repsol. Repsol's guide describes the result as 'contemporary gastronomic luxury' achieved through 'exceptional service, a refined and imposing room, and the elegant plating of a kitchen' that bridges Andalusian heritage with Mediterranean produce and classical French influence.
