Sergio Hernandez is one of the Hernandez brothers behind Latasia, a Spanish-Peruvian-Southeast Asian fusion restaurant that won the ACYRE Award for Restaurant of the Year in 2017, and Taramara, a traditional Spanish regional-cuisine restaurant, both in Madrid. He and his brother Roberto Hernández trained together at La Bola and Aynaelda, and in Asturias and the Basque Country under mentor Rogelio Barahona, before opening Latasia and then Taramara in December 2017.

Biography
Early years
Hernandez grew up in Madrid's Barajas district, where he and his brother Roberto Hernández later opened Taramara.
Career
He and his brother Roberto Hernández trained together at classic Madrid restaurants including La Bola and Aynaelda, and also worked in Asturias and the Basque Country, where they credit Rogelio Barahona at Urkiola Mendi as a formative mentor. Latasia, their first restaurant, fuses Spanish cuisine with Peruvian and Southeast Asian technique picked up during their travels and work abroad, and won the ACYRE Award as Restaurant of the Year in 2017. After nearly two years there, the brothers opened Taramara in December 2017 in the Barajas area, returning to traditional Spanish regional cooking with seasonal, often personally-sourced produce.
