Biography

Early years

Hernandez grew up in Madrid's Barajas district, where he and his brother Sergio Hernandez later opened Taramara.

Career

He and his brother Sergio Hernandez trained together at classic Madrid restaurants including La Bola and Aynaelda, and also worked in Asturias and the Basque Country, where they credit Rogelio Barahona at Urkiola Mendi as a formative mentor. Latasia, their first restaurant, fused Spanish cooking with the Peruvian and Southeast Asian technique they picked up travelling, and won the ACYRE Award for Restaurant of the Year in 2017. After nearly two years there, the brothers opened Taramara in December 2017 in the Barajas area, returning to traditional Spanish regional cooking with seasonal, often personally-sourced produce, including their grandmother Josefa's meatballs.
