About Aynaelda

The Story

Aynaelda sits far out in Aluche, in the south-west of Madrid, and by its own account has spent more than twenty years dedicated to rice, cooking each one to order and refining its technique into a blend of the traditional and the modern. It's also been a training ground: cooks who later opened well-known Madrid restaurants of their own, such as the Hernández brothers of Latasia and Taramara, passed through its kitchen. It draws crowds regardless of the distance, and it's listed in the Guía Repsol.

The Cuisine

An arrocería above all: a long list of rice dishes, priced per person with a minimum of two, from paella valenciana and arroz abanda to arroz del senyoret and an arroz de costillas glaseadas. Day-fresh shellfish from the Huelva coast is the other pillar, and its own site advertises separate bar, restaurant and shellfish menus.

Beyond the Rice

The March 2026 carta goes well past rice. Starters for sharing include hand-carved Ibérico ham, anchovies with wood-fired bread and tomato, herring in arbequina oil with avocado, smoked sardine on Ibérico tomato carpaccio, an ensaladilla 'with an oriental wink', house cod fritters, bienmesabe of marinated dogfish, the Ibérico ham croquetas the house calls 'already famous', a cazuela of morro and pata a la madrileña, serrano snails in an Ibérico sauce and pulpo a feira (mostly €16.50 to €28). Fish mains run from baked monkfish with oriental vegetables to cod confit al pil-pil (€25.50 to €29.50), and the grill covers a Josper-glazed beef rib, oxtail, crisp lamb chops and Angus lomo bajo and sirloin (to €38). A vegetable section adds an aubergine millefeuille, roast-vegetable timbale and an artichoke burger.

Huelva in the Pure State

A separate spring 2026 menu, 'Huelva en estado puro', brings shellfish from Isla Cristina, Ayamonte and Punta Umbría: 'pipas' of white prawn fried in chickpea flour, grilled white prawns, langoustines and carabineros by weight, cañaillas, razor clams, alistado and tiger prawns a la bilbaína. You can also build a custom seafood rice with whichever Huelva shellfish you choose. The bar keeps its own 'Tasquea en Aynaelda' tapas menu, and there are seasonal set menus.
