El Aquanauta was started by three friends who, in their words, 'brought to Mallorca something that didn't exist' more than ten years ago: 'la cocina del Pacífico mexicano' (Mexican Pacific cuisine), built around surf culture and Baja California. It's in the Santa Catalina area of Palma.

Mexican Pacific cooking 'hecha con las manos' (made by hand). The published menu lists guacamole, carnitas, a Mar de Cortés ceviche, and La Diabla quesadilla, plus tacos and a range of mezcal and margaritas.
