Background
About Brut
The Story
Brut sits in a converted lumber warehouse in Llubí, a small town in the middle of Mallorca, and it opened in 2017. The whole room is built around an open kitchen: diners sit at a concrete bar, the cooks work in front of them, and there's no printed menu to look at. It won best new restaurant on the island in 2018 and picked up its Repsol Sol a few years later.
The Cuisine
It's a tasting menu only, and it changes with the seasons rather than the calendar. The kitchen leans hard into zero-waste cooking: fermenting, distilling, curing and smoking to use the whole ingredient. They also make a lot of their own drinks, including kombucha, craft beer, mead, cider and a sake brewed from Mallorcan rice. Confirm current menu options and pricing when you book, as these change by season.
The Chef
The Team
The chef is Eduardo Martínez-Gil, born in Buenos Aires. He worked as a creative director before cooking, then trained with Ferran Adrià at elBulli and staged at El Celler de Can Roca before opening Brut. He runs the place with co-founder Bruno Balbi.

Brut Dining Experience
Brut is a cozy, intimate, rustic counter inside a converted lumber warehouse in Llubí, built around an open kitchen where you sit at a concrete bar and watch the cooks work. The moderate-energy room is good for talking, the seasonal, experimental tasting menu is the only option, and it's a hidden-gem, hard-to-book foodie destination.
