Chef Joaquín Duarte opened Aburi with his partner Mizuki Ono. Uruguayan by birth, Duarte grew up around his family's live-fire grill restaurant, La Otra Parrilla, then moved to Barcelona in 2017, staged at Disfrutar, and spent six years with chef Hideki Matsuhisa at Koy Shunka, a benchmark for Japanese cooking in Europe, before leading the kitchen at IKOYA, Matsuhisa's Tokyo-tavern project with Grupo Sagardi. Aburi is his own project, pairing that Japanese training with the fire he grew up on. Ono, whom he met at Koy Shunka, runs the room.
