About Royal Cantonés

The Story

Royal Cantonés opened in the summer of 2009 on the corner of Calle del Olvido and Julio Merino, in Usera, a neighbourhood with a large Chinese community. It was set up by a family from the Canton region who had come to Madrid some two decades earlier, with a head chef and kitchen team from the same part of China, and the idea from the start was to cook proper Cantonese food rather than the generic Chinese carta most Spanish diners knew.

The Cuisine

Cantonese Chinese: a combined roast plate of duck, poached free-range chicken, roast pork belly, char siu and ribs, and wok cooking like Chinese aubergine served in a traditional Cantonese cazuela.

Why Cantonese Is Different

Most Chinese restaurants in Spain were opened by families from the north and lean on spicier, heavier cooking. Cantonese food is the opposite: chilli is rare, and the seasoning comes from ginger, spring onion, oyster sauce, rice wine and fermented black beans, with fresh and dried ingredients combined for contrast. The house has long nudged regulars away from spring rolls and sweet-and-sour towards dim sum, the eggplant cazuela or, for the braver, jellyfish and beef tendons; it's food built for sharing.

What to Order

The combinado de asados is the signature: roast duck, poached free-range chicken, crisp pork belly, honey-glazed char siu and roast ribs on one plate, with salads. The roasts also come on their own, and the poached chicken is cooked gently and served with ginger oil. The dim sum list covers har gow, roast duck and boletus dumplings, siu mai with crab and prawn, rice-noodle rolls, char siu bao and char siu puff pastries, and 'phoenix claws', chicken feet steamed with black beans. From the wok and the clay pot there's aubergine with minced pork, crisp pig's trotters with five-spice, lamb with ginger and spring onion, beef tendon cazuela, lotus root, choy sum and pak choi with garlic, wonton noodle soup, and Peking duck with pancakes. Vegetarian dishes are marked in green on the menu, and there's an allergen chart.
