Bammbao is a small restaurant on Calle de Nicolás Sánchez, in Usera, the neighbourhood known as Madrid's Chinatown. It's run by Wukun Xu, born in Seville to Chinese parents and raised helping out in his family's restaurant in Triana. The short, changing carta mixes Chinese and Andalusian cooking: Chinese bravas made with cauliflower, the house lingote de oro pork belly, the stuffed-aubergine purple serpent and baos. About Bammbao

The Story

Wukun Xu was born in Seville to Chinese parents and grew up lending a hand in the family's Chinese restaurant in Triana. He moved to Madrid and opened Bammbao in Usera in the early 2020s, and has since become a champion of the neighbourhood's restaurants, including on TVE's La 2. In 2025 the restaurant closed for a refurbishment and reopened in June to a waiting list.

The Cuisine

Chinese-Andalusian fusion on a short carta of small plates, bigger plates and sides, which changes through the year. Dishes that have passed through it include Sichuan ravioli, pork gyozas, lemon chicken, spicy prawn curry and 'bammpanadillas' with a Guizhou chilli sauce.

The House Classics

Four dishes stay put. The lingote de oro, 'gold ingot', is a family recipe of pork belly cooked low and slow with Chinese spices, best eaten in a bao (€13.50). The serpiente púrpura is a stuffed aubergine (€6.80), the bravas chinas are crispy cauliflower with a kick (€5.80), and the spicy chicken bao has its own following. Around them the carta usually runs to about four starters and five mains: grandma's empanadillas, pork gyozas, a shrimp tortillita, the crispy duck patorrezno and old-fashioned noodles.

Off-Menu Desserts

The fusion desserts often aren't on the carta, so ask: past surprises have included a sweet 'salmorejo' that's really a jam, and panna cotta with arbutus. On the printed carta there's a crumbled tart and the Danochino.

Booking

Lunch runs 13:30–17:00 and dinner 20:30–00:00, each in two sittings of 90 minutes. Booking is recommended, especially at weekends, through the website or by WhatsApp, since the phone isn't always answered when it's busy. The nearest metro stops are Usera (L6) and Almendrales (L3), and EMT buses 6, 47, 78 and 247 stop nearby.
