On non-holiday Wednesdays, outside the hottest weeks, it's the house cocido madrileño: pickles to start, a hot mollete de pringá, noodle soup, the vegetable vuelco with chickpeas and optional homemade tomato sauce with cumin, and the meat vuelco. The carta adds callos a la madrileña, ham croquetas, huevos rotos, Rubia Gallega chuletón by the kilo and, in spring, almadraba bluefin tuna from Cádiz.
