Doble y Gilda is a bar on Calle de Santa Engracia in Chamberí, carrying a Solete in the Guía Repsol, and the name is the order: a doble of beer and a gilda. Gildas come in several versions, from the classic anchovy to octopus, sardine and Barbate red tuna, and diners also mention the sardine-and-butter tosta, montaditos, cecina and pastrami. There's a terrace; closed Mondays.

Background

About Doble y Gilda

The Story

Doble y Gilda began in 2019 as a family project: a small shop on Calle de Santa Engracia in Chamberí selling handmade gildas to take away. It quickly turned into a bar and a meeting point for aperitivo lovers, and it now carries a Solete in the Guía Repsol. A doble, the big measure of draught beer, and a gilda, the anchovy-olive-pepper skewer, are both fixtures of a Spanish bar counter, and the name puts the two together, which tells you exactly what kind of place it is. The family has since opened a second, sit-down restaurant, Doble & Gilda Pradillo, on Calle Pradillo in Prosperidad, and runs a catering service for events.

The Cuisine

Gildas are the specialty, from the classic anchovy version to a double gilda, octopus, sardine and a red-tuna take from Barbate, mostly €2.60 to €5.25, plus a gordal-olive pincho with sheep's cheese. Diners also single out the sardine-and-butter tosta, montaditos, cecina and pastrami, with vermouth the drink they mention most.

Calle de Santa Engracia 105, 28010, in Madrid's Chamberí district. The Guía Repsol address names Chamberí directly.

Nearby

Trafalgar is the calm shoulder between Malasaña and the wider avenues, residential enough to feel lived-in and central enough to walk out of. The eating skews to neighbourhood favourites and small confident kitchens rather than destinations. It gets quieter, and better value, the further you go from Gran Vía.
