Nato opened on 4 January 2025 on the corner of Calle Elisa and Calle Quince de Agosto in Usera, and within months it had a Solete in the Guía Repsol and a waiting list. Its cooks, Estefano and Furi (Ángel Francisco Pérez), met in London at a new-style Japanese restaurant, and they cook a short menu of tapas that mix Mediterranean and Asian flavours, almost everything passing over the robata, the Japanese charcoal grill, or finished with a blowtorch. The signatures are a smoked zamburiña with noisette butter and truffle, 'salmon on fire' and pinchos morunos with homemade naan, and the drinks run to natural wines.

About Nato

The Story

Estefano and Furi have cooked in many kitchens around the world, and met in London at a new-style Japanese restaurant, where they picked up their knowledge of Japanese cooking. Reunited by a shared dream of a bar with a singular style of tapas, they took over a small corner in Usera that had long been a neighbourhood shop, kept its old look, and opened Nato on 4 January 2025. By June that year it had a Solete in the Guía Repsol, in the guide's pet-friendly category.

The Cuisine

A new take on Asian and Spanish food built on tapas, many served by the piece, cooked over charcoal on the robata or finished with a blowtorch and smoke. The menu is short, about ten tapas, with off-menu dishes that change with the season and what's available.

What to Order

The signature is the zamburiña with noisette butter, pine nuts, soy, truffle paste and an anchovy from L'Escala, melted at the table with a blowtorch and smoked with pine branches. 'Salmon on fire' is a cured salmon tataki smoked under a bamboo steamer with herbs and served with spicy ponzu. From the robata come peppers with white miso and yuzu kosho and two 'chupa dedos' pinchos morunos, pork and aubergine, with homemade naan, yogurt and herbs; there's also a crisp pork and prawn raviolo with spicy mayonnaise and a 'paloma' of pickled-mussel ensaladilla. Desserts are an olive-oil flan and a chocolate mousse with beetroot and sherry vinegar.

Drinks and Booking

Natural wines lead the list, from whites and orange wines to reds, claretes and ancestral-method sparklers, plus unlisted 'secret wines' that change constantly and house wines by the glass, and there's beer too. Book ahead: the room is small, slots last an hour and a half, and it's closed on Monday and Tuesday.

Small and unfussy: exposed brick, a granite floor, old-school black bar chairs, a short bar and a handful of tables, with old shop signs from the corner's past still on the walls. Outside there's an improvised terrace on beer crates, and inside the music is loud Latin pop. Tables run in 90-minute slots, so it's a place for a lively dinner rather than a long sobremesa. Dogs are welcome.
