About Insurgente
The Story
Insurgente is the first project of their own for Genaro Celia, from Colombia, and Agustín Mikielievich, from Argentina, who trained at Le Cordon Bleu and cooked in restaurants including Álbora and the now-closed Fayer. The idea was to bring fine-dining technique to an informal market counter, at prices for every pocket, without the corsetry of haute cuisine.
The Cuisine
The stand serves crispy chicken tacos with a tandoori hint and a spicy mango glaze, grilled beef gizzard, Mexican-style stewed meat pasties, and a shredded meat focaccia, the Latin American base pulled toward Asian technique throughout.
Two Cooks, Two Countries
Each chef's roots show on the plate. Agustín brings the Argentine grill: the stall cooks over a kamado, the Japanese ceramic grill that lets the team roast, smoke or cook low and slow. Genaro brings Colombia, and the creamy plantain under the grilled sweetbreads is a recipe from his mother's kitchen. Most of the menu is designed to be eaten with your hands, which suits a stand-up market counter, and the drinks list leans on characterful wines such as dry palominos and godellos.
What to Order
The fixtures are the grilled Chinese aubergine with pistachio romesco and tamarind-miso sauce, a cured-fish tiradito with spicy labneh, lulo gel and sumac, a homemade bao of slow-cooked beef brisket with fermented chilli sauce, and beef sweetbreads grilled with a spiced panela glaze over creamy plantain with herb mustard. Around them sit crispy tandoori chicken tacos with spicy mango glaze, grilled-rib croquetas with lime gel, crispy pork belly with smoked huancaína, crispy papas criollas with a low-temperature egg, an Ibérico al pastor focaccia with pineapple stracciatella, tuna tartare with miso mayo and corn arepitas, and chorizo udon. For dessert, the dulce de leche chocotorta with hazelnut cream is one of Agustín's proudest creations.
