Agustín Mikielievich is from Resistencia, in Argentina's Chaco province, near the border with Paraguay.

Career

Mikielievich, who is Argentine, and his partner Genaro Celia, who is Colombian, both trained at Le Cordon Bleu in Madrid, and the two of them met while working together at the now-closed Fayer. In April 2024, they opened Insurgente, their first restaurant as owners, at stall number 6 of the Mercado de Chamberí.

Philosophy

Insurgente's cooking is built on high-level Latin American street food, drawing on both chefs' own roots while pulling in techniques and flavours from Japan, Europe and elsewhere. Mikielievich describes their approach simply: "Mezclamos sabores y buscamos que queden ricos, que se equilibren" (we blend flavours looking for them to taste good, to be balanced). Signature dishes include a pan bao with slow-cooked brisket, fermented chiles and morita chile powder, and udon noodles with a grilled squid sauce, guanciale and San Simón cheese air. The stall runs without reservations, on a fixed menu with shared tables, a format the pair have used to challenge how a traditional Madrid market restaurant is supposed to work.
