The Story
Hutong bills itself as cocina imperial china, traditional and avant-garde at once, in the Salamanca district. It closed for a refurbishment after what its director, Mon, called recent problems that affected staff and customers, and reopened on 21 May promising a renewed, better restaurant.
The Cuisine
Traditional Chinese cooking with a modern streak, led by the Peking duck. The duck follows an 18-step traditional recipe: 24 hours of marinating, then 50 minutes roasting over fruit-tree wood in a stone oven built by hand. The carta also covers dim sum, wok dishes and seafood, and there's a tasting menu.
Prices
The Peking duck is €68 whole and €38 for a half. Hutong also does takeaway and delivery through its own online ordering.
