The Story

El Bund occupies a former mansion in Arturo Soria, near the Chinese Embassy, decorated to evoke a 1930s Shanghai residence. The kitchen turns out more than 30 dim sum preparations, hand-made fresh daily, spanning Cantonese, Shanghainese and Sichuan styles, and there's a terrace divided into three garden-inspired spaces.

The Cuisine

The dim sum list runs well past the 30-plus preparations already mentioned: vegetable dim sum, Shanghainese shaomai with veal and mushroom, Cantonese shaomai with shrimp or fish, Pekinese shaomai with pork, jiaozi filled with shrimp or lamb, plus xiao long bao in Iberian pork broth and fresh pasta made on-site.

Shanghai in the 1930s

The restaurant takes its name from the Bund, Shanghai's waterfront, and its house on a quiet side street off Arturo Soria is decorated like one of the Anglo-Chinese colonial residences of 1930s Shanghai. It's one of Madrid's long-established Chinese addresses, spread across two main dining rooms and five private rooms, with a separate entrance to the private rooms and the terraces. The terraces are inspired by the gardens of Suzhou, with traditional windows and doorways surrounded by greenery that keeps the heat out. It's common to hear Chinese spoken at the tables.

Dim Sum, Duck and Beyond

The dim sum are the place to start. The coloured jiaozi are steamed and then seared: black with Iberian pork and mushrooms, yellow with chicken and corn, green with vegetables and shiitake. There are shaomai, guotie of prawn and Iberian pork, and xiao long bao of Iberian pork, chicken or beef. The Peking duck comes with house-made wheat pancakes, cucumber and spring onion and a hoisin-based sauce whose recipe the kitchen keeps to itself.

The carta covers Cantonese, Peking, Sichuan and Shanghai cooking: fresh tofu with century egg, Macau-style roast pork belly, whole sea bass in sweet-and-sour sauce, grilled eel, lobster and scallops Cantonese-style, Sichuan hot pots and seasonal specials such as turbot cooked in the shape of a boat. Off the menu there's a Sichuan stew of tripe, blood and fresh pepper, and sea cucumber can be ordered ahead. Tasting menus for two, four and six are offered, and after-dinner gin and tonics are a house habit.

The Team

El Bund is part of Grupo Mandarín, led by Julia Zhou, which also runs Casa Lafu on the Gran Vía and Kököchin. The group has a central kitchen outside Madrid where dim sum are also made for other restaurants, and the dim sum are made by hand by a specialist master.
