Background

About Beytna

The Story

Beytna was born from a wish to share Jordanian cooking in Madrid the way the family has eaten it for generations. The project is led by Mustapha, and the recipes come from grandmothers passed down to grandchildren, cooked with patience and natural spices. The team describes Beytna as a place to gather and discover Jordanian culture through food, and runs it as a family house for groups, families and companies alike.

The Cuisine

Halal Jordanian and Lebanese cooking. Meals start with a bread and aperitif service of traditional bread, crisp za'atar triangles, labneh, olives and a small shot of lentil soup or lemon-mint juice (€2.80). From there it's mezze, a charcoal grill, dishes from the oven, and a short list of special dishes that need 24 hours' notice.

The Menu

Cold starters run from plain hummus (€10) to hummus ras asfour topped with sautéed lamb tenderloin and pine nuts, truffle hummus, muhammara, mutabbal and yalanji, stuffed vine leaves slow-cooked in olive oil. Hot starters include falafel, batata harra, spinach fatayer, kubbeh filled with minced meat and pine nuts, chicken musakhan rolls with sumac and arayes sujuk, grilled pita stuffed with spiced meat and cheese. From the charcoal grill come shish tawook, classic, spicy-cheese and pistachio kebabs, lamb skewers, grilled sea bass and lamb chops (€20 to €28), or a mixed grill at €48 for two. The oven section has okra tajine, shrimp fatteh, kofta baked in tahini or with potatoes and tomato, a slow-cooked lamb neck over basmati rice and sajieh, a Jordanian stir-fry of lamb fillet and peppers.

Mansaf, Roast Lamb and Sweets

With 24 hours' notice you can order Jordan's national dish, mansaf, lamb with rice and jameed dried-yogurt sauce under pine nuts and parsley (€25 per person, minimum four), or kubbeh labanieh in yogurt sauce. The showpiece is Beytna's lamb: a young lamb of 9 to 11 kg roasted slowly and served on basmati rice with nuts and a yogurt-cucumber sauce, sold as an individual portion (€23), a shoulder for two (€55), or a quarter, half or whole lamb for up to 12 people (€100 to €360). Desserts include baklava made daily with pistachio and orange-blossom syrup, um ali, cheese or walnut katayef and kunafa with melted white cheese.

Set Menus and Timing

The tasting menu (€42 per person) covers hummus, mutabbal and tabbouleh, then falafel, spinach fatayer, musakhan and cheese rolls, a main of your choice and the chef's dessert, with bread included. Monday to Thursday at lunch there's a menu of the day built around chicken or meat shawarma or falafel with tabbouleh, hummus and fries. Beytna opens every day for lunch from 13:00 or 13:30 until 16:00 and for dinner from 20:00 or 20:30 until 23:00, and offers closed menus for groups and events.

The pitch is Arab hospitality, generous and celebratory, so it suits big family meals and celebrations as much as a quiet dinner.
