About Chulla
The Story
Chulla is Quichua for 'unique', and the name also carries the Ecuadorian phrase chulla vida, the one life you get, which is how Pablo Maldonado and Mayra Gramal describe the moment they decided to go for it. They opened in 2020, in the middle of the pandemic, in a small former neighbourhood bar in Las Rosas, between Barajas airport and the Metropolitano stadium; Maldonado sold his car and put in all their savings. They started with coffees, cañas and aperitivos and built up to the cooking he'd always had in mind. It entered the Guía Repsol in 2025 and received its first Repsol plaque as Recomendado in 2026. The room is dressed to match the name: paintings by Oswaldo Guayasamín, reproductions of Valdivia-culture pieces and a large Andean condor mural.
The Cuisine
Seasonal Spanish fish, meat and vegetables run through the flavours and techniques of Ecuador's highlands and coast. There's no literal nostalgia, it's reinterpretation: shrimp ceviche with tree tomato, an Andean salteado with slow-cooked egg, mote pillo, corvina ceviche, sango, figs with cheese, and a house smoked butter with truffle, peanut and achiote oil. Dishes the Guía Repsol has pointed to include Andean corviches, 'diosas' (gyozas) mar y montaña, ceviche, a sauté of Andean grains, a brownie and a plantain sponge. The carta changes weekly with what's good, and the tasting menus are reworked roughly every two months.
The Tasting Menus
Two tasting menus, both for the whole table and by reservation. Menú Esencia Ecuatoriana, at €70, runs to seven passes: two snacks, two starters, a main from the sea, a second from the land and dessert. Menú Raíces Andinas, at €80, has eight: one snack, two starters, two mains from the sea, two from the land and dessert. Both travel between Ecuador and the Mediterranean, and there's a wine list of several references alongside.
A Small Room
The kitchen serves at most 28 diners a day, and the couple say the limited capacity is what keeps the service calm and personal. Regulars book weeks ahead. Allergies and intolerances are recorded when you book, by phone or online, and the whole restaurant can be hired for a private event with a closed tasting menu, on dates agreed with the team.
The Chef
The Team
Maldonado is from Quito. He learned to cook from his grandmother Emilia, worked at a Burger King at 16, and on arriving in Madrid got his first job at a greengrocer's near Cuzco, where he learned Spanish produce. A neighbour gave him a trial at her French restaurant; from there he made pasta daily in an Italian kitchen, trained under Rogelio Barahona in a Basque kitchen, worked at the Asturian Asgaya, where fish became his territory, and became head chef at Inclán. A stage at a two-Michelin-star restaurant in Belgium taught him consistency and discipline. He studied haute cuisine and pastry at the Casa de Campo school, and fine art and photography, which shows in the plating. Mayra Gramal, also from Quito, left a corporate career to run the room as administrator and maître.
