Bovia del Viso is an asador on Calle de Carmen Martín Gaite, in the Latina district on Madrid's south-west edge, opened in 2017 by chef Carlos Bovia, who has also run Asador Avelino for more than twenty years, and it holds a Solete in the Guía Repsol. The grill burns holm-oak charcoal for aged beef, burgers and vegetables, a wood oven handles the roasts, and the carta adds wok dishes, canned seafood, croquetas and homemade desserts. There's a bar, two separate dining rooms for groups of up to 35 and 60, and a terrace open all year.

About Bovia del Viso

The Story

Carlos Bovia has spent his life in kitchens, learning the trade from his parents. For more than twenty years he has run Asador Avelino, and in 2017 he opened Bovia del Viso as a new concept bringing tradition and modern touches together. In the kitchen his right hand is Inés, and the menu is refreshed regularly with new dishes. The Guía Repsol gave it a Solete, praising the grill and asador cooking, the quality of the cuts and the terrace.

The Cuisine

Asador cooking: meat grilled over holm-oak charcoal and roasts from the wood-fired oven, alongside gourmet burgers, sharing plates and homemade desserts, with a broad cellar of Spanish DO wines. Gluten-free bread is available for the burgers.

From the Grill

The big cut is a premium aged lomo alto, currently Friesian or Simmental aged around 50 days, sold by the kilo at €85, with chips. There's also aged lomo bajo of old cow (€28.50), picanha with roast potato and kimchi mayonnaise, chorizo criollo with chimichurri, lamb sweetbreads and glazed Iberian lagarto. The burgers, all grilled over charcoal on butter brioche, include a classic of old-cow beef, an aged-beef version with smoked scamorza and quince, and one with goat's cheese and confit piquillo.

To Share and Dessert

Starters range from smoked black Angus cecina, cured sheep's cheese and Galician tinned mussels and razor clams to patatas revolconas with Soria torreznos, a single 'unit' patata brava, huevos rotos with Iberian ham, croquetas of ham or callos, baby squid fried or griddled, and an XXL cannelloni of beef cheek and mushrooms. Desserts include coffee flan, several cheesecakes (one with Cabrales), and the Avelino's chocolate cake, back by popular demand. Bread service is €2 per person.

Groups and Hours

One dining room seats up to 35 and the other up to 60, so groups can reserve a whole room, and there are set menus for groups. It opens Tuesday to Thursday and Sunday from 12:00 to midnight and Friday and Saturday from 12:00 to 01:00, and closes on Monday. Bookings are taken online.
