Asador Guetaria has been a byword for Basque cooking in Madrid since 1982, on Calle Aviador Zorita in Cuatro Caminos. The grill runs on holm-oak coals: whole turbot Guetaria-style and monkfish for two, txuleta and rib-eye of Galician blond beef aged 30 to 40 days. The kitchen also does txangurro a la donostiarra, kokotxas and bacalao al pil-pil, and merluza a la bilbaína. There's a gastrobar for pintxos, several dining rooms including private ones, and free valet parking.

About Asador Guetaria

The Story

Asador Guetaria opened in 1982 and has spent more than four decades cooking Basque food in Madrid on one simple idea: top produce and absolute respect for the coals. Fish is wild and from the Cantabrian Sea, red meat is aged to the right point, and everything goes over holm oak. The carta starts from Basque tradition and adds more current dishes alongside.

The Cuisine

Basque asador cooking: wild Cantabrian fish and aged beef over holm-oak coals, Donostia classics such as txangurro, kokotxas and pil-pil, and seasonal vegetables from Navarra.

From the Grill

The charcoal grill handles whole fish for two, monkfish with garlic refrito (€60 per kg) and turbot roasted Guetaria-style (€75 per kg), and beef aged 30 to 40 days: txuleta (€95 per kg), rib-eye of Galician blond cow, sirloin and fillet. From the fish counter: bacalao confit al pil-pil (€29.50) or grilled with garlic, Cantabrian bonito with mustard velouté, hake kokotxas al pil-pil, merluza a la bilbaína and baby squid in their ink Donostia-style.

Starters and the Gastrobar

Hot starters include txangurro a la donostiarra (€26.50), a warm spider-crab pie, a cider-house salt-cod omelette and the runny tortilla vaga Guetaria, with Tudela artichokes, pochas a la carbonara vasca with line-caught squid, and a Figueres onion tatin. At the bar the same kitchen turns out gildas, an anchovy brioche, a steak-tartare brioche, a txangurro pintxo (€7.50), croquetas and txistorra, and many plates cost less at the bar than in the dining room: the ensaladilla with bonito is €11.50 at the bar against €15.50 at a table.

Cellar and Groups

The house calls its cellar historic, chosen to go with grilled food, and the wine list is online. There are group menus, catering and events, and dishes to take away.
