Amós by Jesús Sánchez is the Cantabrian restaurant of the Rosewood Villa Magna on Paseo de la Castellana. Sánchez, the three-Michelin-star chef of El Cenador de Amós in Cantabria, calls cooking a real passion and a way of life, and the restaurant brings the traditional, ingredient-led cooking of Spain's northern coast to Madrid. It is recommended in the Michelin Guide, holds one Repsol Sol and sits at #449 on OAD's Europe Top Restaurants 2026, up from #450 in 2025.

Amós opened in November 2021, when the Villa Magna reopened as a Rosewood hotel after a full renovation, as Sánchez's first restaurant in the capital. The idea was to carry the essence of Cantabrian cooking to the centre of Madrid rather than to reproduce El Cenador: a more traditional, product-led table, in a room with the kitchen in view.

The Carta

The carta opens with a smoked-bonito Gilda with caviar, Cantabrian anchovies, oysters with a Cantabrian ponzu, stew croquettes and the Amós Spanish omelette to share, alongside Santander-style fried squid and a beef-tenderloin Bikini. Mains include 'our famous' hake in green seaweed sauce (€38), verdina beans with hake cheeks, baby squid in their ink, sea bass with Pasiega butter, a spicy tripe stew, beef tenderloin with Picón Bejes-Tresviso cheese sauce, roast pigeon, suckling goat and stuffed pularda with foie gras, plus rice dishes for the table. Desserts (€15 to €16) include a traditional flan with Pasiego cream ice cream.

The Menus

Esencia, a walk through the tradition of the house, costs €140 with VAT: snacks such as the smoked-bonito Gilda and the 2025 version of the Amós omelette, starters of smoked tuna with avocado gazpachuelo, seasonal mushrooms and stuffed baby squid, the famous hake, roast pigeon, a surprise pre-dessert and a peach, apricot and passion-fruit escabeche. It is served to the whole table, with an exclusive wine pairing for €100 or a five-course version for €97.

At midday Wednesday to Friday, the Amós Formula (€49) offers the chef's appetisers, a choice of main and dessert, with water and coffee included.

Jesús Sánchez, born in Navarre and Cantabrian by adoption, trained in Basque and French cooking and has run El Cenador de Amós in Villaverde de Pontones, Cantabria, since 1993, with Marián Martínez, his partner and co-owner, directing the dining room. El Cenador holds three Michelin stars, a Michelin Green Star and three Repsol Soles, which makes Amós the Madrid outpost of one of Spain's most decorated kitchens. He calls cooking 'a real passion' and 'a way of life,' and the Madrid restaurant its expression.
