Pastry chef José Alberto Trabanco and his wife Ana Ramos bake bread and French pastry every day in the open obrador on site: organic-flour breads on natural ferments, croissants, brioche, financiers, canelés and kougelhopf, tarts and chocolates. The room serves origin coffee, breakfasts, brunch and merienda, and is dog-friendly.

The Story
Santa Eulalia opened on 22 December 2015. José Alberto Trabanco studied law at the Universidad Autónoma de Madrid, managed a Meliá hotel in Burgos for five years, trained in cooking at the Aiala school and took the pastry diploma at Le Cordon Bleu in Madrid in 2012. Ana Ramos, a journalism graduate, spent more than 15 years as a reporter before running the shop and its communication. They set it up as a neighbourhood meeting place built on French bread and pastry, and during the 2020 lockdown collaborated with chef Mario Sandoval's solidarity kitchen for families in San Blas.
The Cuisine
French boulangerie and pâtisserie made daily. Bread uses only organic flours and natural ferments, with no industrial yeast. The pastry side follows French tradition: croissants, brioche, praline moelleux, financiers, canelés, kougelhopf and a pistachio puff pastry, plus carrot, banana and praline cakes, lemon-lime tarts, tarte tatin, millefeuille, cheesecake and Sacher. Chocolate is a big part of it, with bonbons and bars from different origins, and there's origin coffee from professional baristas, hot chocolate and gourmet teas.
