About Alma Nomad Bakery

The Story

Alma Nomad began in Budapest. Joaquín Escrivá, from Madrid, left the city to travel through Europe and landed in Vienna, where he baked at Joseph Brot, a sourdough pioneer, and met Timi Argyelan, a pastry cook from Budapest who became his partner in life and in the business. They opened their first bakery in Budapest, on Kamermayer square, and after a few years and the pandemic moved their ovens to Madrid, opening this small corner on Calle de Santa Feliciana, just off Plaza de Olavide, in 2021. Álvaro Henares, a friend from their Vienna days, joined the team. It holds a Repsol Solete, and its Christmas roscón can be pre-ordered on its site.

The Cuisine

Sourdough bread and slow processes first, with flours from Cerecinos and from Despelta in Sigüenza. The fixed loaves include a white wheat hogaza, a mix of white, wholemeal and wholemeal spelt, and a Nordic-leaning tin loaf of half rye, half spelt with flax, sunflower, sesame and pumpkin seeds. The pastry leans Hungarian and Austrian and is made with Elvir butter, organic eggs and Valrhona chocolate. The counter runs to butter croissants, pain au chocolat, an almond croissant filled with almond cream, a pistachio croissant with candied raspberry, the Brioche Bostock toast with cinnamon, cardamom, bay, raspberry, pistachio cream and almonds, a cinnamon roll, kouign-amann, a sour cherry galette on wholemeal spelt, a cardamom bun, a ricotta bun with vanilla cream and a lemon tart with ricotta and meringue. Many of the special pieces are baked only at weekends.
