The Story
Glass Bar has been Hotel Urban's cocktail bar for more than fifteen years. In November 2022 Derby Hotels Collection relaunched it as Glass by Sips with Simone Caporale and Marc Álvarez, whose Barcelona bar Sips had just placed third on The World's 50 Best Bars 2022, and it's listed today as Glass Bar by SIPS. The hotel presents it as the bar going back to its roots as a temple of cocktails.
The Cuisine
Cocktails are the offer, built on classic technique with contemporary turns, each served in glassware chosen for the drink. The Sips-era list launched with signatures such as a Bloody Merry of vodka, tomato and raspberry, a Negroni over ice that doesn't melt, and Black Dot, pitched as a Negroni invented in the Prado. Cava, champagne, spirits and wines round it out, with gildas and ibérico ham to snack on.

Warm and dark rather than bright. Large wengé wood panels line the room and the back-bar is lit from behind through alabaster, which is the detail the hotel leads with, and the design nods to Madrid in the 1920s. There's a dress code and the management reserves the right of admission, so this is the dressed-up end of the city's cocktail bars.
