Del Diego is a classic cocktail bar at Calle de la Reina 12, in Chueca, holding a Solete in the Guía Repsol. Fernando del Diego opened it in 1992 after 32 years at Chicote under Perico Chicote, and since his death in 2016 his sons Fernando and David have run it, keeping the classic recipes and the jacket-and-tie service. The Story

Fernando del Diego started out as a bellboy at Museo Chicote and spent 32 years there alongside Perico Chicote, becoming, by the bar's own telling, one of the most respected barmen of his generation; he was the waiter Luis Buñuel always asked for his dry Martini. Tired of working for others, he opened Del Diego in 1992 on Calle de la Reina, just behind Gran Vía, and many of his Chicote regulars followed him. He died in 2016, and his sons Fernando and David, who had long worked the bar with him, took over. The room, by architects Álvaro Soto and Javier Maroto, has a New York air: it shared the Comunidad de Madrid's first interior-design prize with the Museo Thyssen in 1992, and in 2016 the Comunidad named it Madrid's best bar.

The Cuisine

Classic cocktails made to the original recipes rather than signature creations: if you order a margarita, it should taste like a margarita. Many are served without ice, as the classics demand, from the Manhattan and dry Martini to the whisky sour; the Porto Flip, Negroni, pisco sour, gimlet and piña colada are house staples, and the list is one of the longest in Madrid. Food is there to go with the drinks: croquetas, tortilla and Ibérico ham.
