Seoul opened in 1994 at Moll de la Fusta and moved to its current Avinguda de Gaudí address in 1998. Its owners, a South Korean couple named Kim and Bae, emigrated to Spain in 1986 with the aim of bringing traditional Korean home cooking to Barcelona. The restaurant's guiding idea, stated on its own website, is that food is medicine when prepared with fresh ingredients and care.

The kitchen covers the breadth of Korean cooking: house-made kimchi and banchan, dumplings (mandu) either steamed or pan-fried, hot-stone bibim bap, sweet-potato chapche noodles, spicy stews (kimchi chigue, doenjang chigue, yuk kye jang), and Korean barbecue cuts of beef and pork wrapped in lettuce leaves.
