About Jazminos

The Story

Jazminos began in Bilbao in 2019 as Paula Sandoval's homage to the Arab influence in Mediterranean cuisine. After training in Michelin-starred kitchens in the Basque Country, Sandoval travelled through Palestine, Lebanon, Turkey and Greece with her father to reconnect with family recipes passed down from her great-grandmother. The Barcelona branch on Madrazo opened in summer 2025 as a second home for the project.

The Cuisine

The kitchen cooks entirely over charcoal, no gas, and focuses on bread, fire and the sharing traditions of the Levant. Dips of hummus, labneh and baba ganoush arrive with warm pita; mains centre on lamb and chicken shawarma, Moorish skewers and arayes stuffed with feta. The pantry draws on heritage techniques of pickling, dehydration and seasoning collected during Sandoval's travels, paired with a curated list of natural wines.

Chef-owner Paula Sandoval (Barcelona, 1995) leads the kitchen. She worked in Michelin-starred restaurants in the Basque Country before opening Jazminos in Bilbao with her father, and expanded to Barcelona in 2025.
