The Story

Igueldo was founded by Gonzalo Galbete and Ana López de Lamadrid, two professionals with formidable Michelin-starred backgrounds who opened a restaurant that reflects everything they learned without trying to replicate any of it. Gonzalo trained at Tubal de Tafalla (1 Michelin Star), Arzak (3 Michelin Stars), and Rodero (1 Michelin Star), then spent time managing a well-regarded Basque restaurant in Santiago de Chile. Ana trained at Neichel (2 Michelin Stars) in Barcelona, at Arzak (3 Michelin Stars) in San Sebastián, and at Rodero (1 Michelin Star) in Pamplona. She also wrote a guide to Spanish wines with Josep Puigcorbé, sommelier of Restaurant Drolma. The restaurant remains exactly what they intended: a neighbourhood restaurant that cooks at a high level without calling attention to itself.
