The Story

Fonda Balmes opened on 15 July 2025 on Carrer de Balmes in the space where chef Fermí Puig had run his restaurant until his death on 19 July 2024. Puig was one of the most important figures in Barcelona's fine dining history, the driving force behind Drolma at the Hotel Majestic, which held a Michelin star from 1999 until its closure. Chef Josep Maria Masó and dining room director Alfred Romagosa both made their names at Drolma and chose to open Fonda Balmes as an explicit tribute to Puig and to the kind of classical, generous Catalan cooking he championed. The name 'Fonda', an old Catalan word for a roadside inn, signals the intent: serious cooking without pretension, the kind of meal where tradition is the point rather than the starting point for deconstruction.

The Cuisine

Classical Catalan à la carte, no tasting menus, no molecular gestures, no fusion. The kitchen works with the full canon of Catalan technique: rice casseroles, mar i muntanya, bacallà preparations, slow-braised meats, seasonal fish from the Catalan coast. Current menu dishes include chanterelle vichyssoise with scallops, creamy Pals rice casserole with squid and clams, sea bass fillet with bouillabaisse sauce and suquet potatoes, monkfish casserole with burnt garlic, shoulder of kid goat confit with Lleida pears, and blood squab with cardamom and Priorat red wine. The cheese trolley, a rolling selection of Catalan cheeses selected by Francesc Antúnez and served in the old Drolma tradition, is a destination in itself.

The Team

Chef Josep Maria Masó led the kitchen at Drolma from 1999 to 2011, under Fermí Puig. Alfred Romagosa directed the dining room at Drolma during the same period. Together they have reconstructed the service traditions of that era, tableside carving, the cheese trolley, the service cart, while cooking from the Catalan market rather than from a museum.
