Apriori is a market-fresh restaurant and late-night cocktail bar on the historic Tuset Street in Sant Gervasi, opened in 2021 by chef Borja Lario (ex-Tickets, ex-Bodega 1900 under Albert Adria). The seasonal menu rotates weekly with signatures like stracciatella with sea urchin and brioche steak tartare.

Background

About Apriori

The Story

Apriori opened in late 2021, founded by chef Borja Lario (formerly of Albert Adria's Tickets and Bodega 1900), Adria Duarte, Oscar Cugat, and influencer Ines Arroyo (founder of sustainable fashion brand Laagam). The concept was born from frustration with Barcelona's typical tradeoff: boring places with good food, or fun places with bad food. Located in the historic Tuset Street zone, Apriori revives the area's cultural legacy as a venue that delivers both quality dining and a vibrant atmosphere.

The Cuisine

Chef Borja Lario focuses on simple dishes made with the best market products, rotating the menu weekly or every 10 days based on seasonal availability. Drawing on his years at Tickets and Bodega 1900 under Albert Adria, the kitchen produces dishes like stracciatella with sea urchin, carpaccio of langoustines with flying fish roe, brioche steak tartare, esqueixada (Catalan salt cod salad), and octopus. Lunch menu available at 18.50 EUR Tuesday to Friday.

The Team

Chef Borja Lario brings his training under Albert Adria at Tickets and Bodega 1900 to Apriori's kitchen. Co-founder Adria Duarte handles the venue's nightlife programming, while Ines Arroyo and Oscar Cugat contribute to the brand identity. After 23:30, the restaurant transforms into a cocktail bar with live acoustic music on Wednesdays and DJs Thursday to Saturday.
