Early years
Panatieri was born in Brazil to a family with roots in Pisa and Calabria — the southern-Italian thread that runs through every Sartoria menu.
Career
Panatieri and Jorge Sastre met working at Roca Moo, the Roca-family restaurant at Barcelona's Hotel Omm. After Roca Moo closed, the pair opened Sartoria Panatieri at Encarnació 51 in 2018, devoted to artisanal pizza. The pizzeria was named Best Pizzeria in Europe by 50 Top Pizza in 2023 and second-best in the world in 2024. In 2023 the pair opened Brabo, a modern grill-focused steakhouse, which carries one Repsol Sol. They also run Romo (a Roman-style pizzeria) and Molla (a sandwich project).
Philosophy
Panatieri's cooking is obsessive about ingredient: in-house cheeses and charcuterie made from endangered Gascón pig raised on an organic farm in Lleida; only the best seasonal tomatoes (and a willingness to change the Margherita off the menu if the tomato isn't right). The pizza dough — and now the grill at Brabo — is treated with the same fanatical attention.
