Early years
Sastre grew up in Carabanchel, a working-class district of Madrid, and built his cooking career in Barcelona.
Career
Sastre met Rafa Panatieri at Roca Moo, the Roca-family restaurant at Barcelona's Hotel Omm. After Roca Moo closed, the pair opened Sartoria Panatieri at Encarnació 51 in 2018, devoted to artisanal pizza. Sartoria Panatieri was named Best Pizzeria in Europe by 50 Top Pizza in 2023 and second-best in the world in 2024. In 2023 the pair opened Brabo, a modern grill-focused restaurant, which carries one Repsol Sol. They also run Romo (Roman-style pizza) and Molla (sandwiches).
Philosophy
Sastre and Panatieri share an obsessive ingredient ethic: in-house cheeses and charcuterie made from endangered Gascón pig raised on an organic farm in Lleida; only seasonal tomatoes good enough for the Margherita. Brabo extends the same approach to grilled meats and product.
