Biography
Early years
Casals studied Gastronomy and Culinary Art at the Basque Culinary Center in San Sebastián — Spain's leading culinary university — and met his future business partner Teo Rubio at school in Barcelona when they were twelve years old.
Career
Casals honed his trade with Andalusian chef Dani García in Marbella, at Pangea Restaurant in Monterrey (Mexico), at the one-Michelin-star Lluerna in Santa Coloma de Gramenet under Víctor Quintillà, and at Gat Blau in Barcelona under Pere Carrió. In autumn 2016 he and Teo Rubio — both under thirty — opened Teòric Taverna Gastronòmica in la Dreta de l'Eixample. The restaurant is in the Michelin Guide selection and Repsol Recomendado.
Philosophy
Casals's project at Teòric centres on 'Mar i Muntanya' — the Catalan sea-and-mountain register where the Pyrenees meet the Mediterranean. The cuisine is built on carefully curated, top-notch, seasonal, and organic produce.
