Víctor Quintillà is a Catalan chef who has run Lluerna in his home town of Santa Coloma de Gramenet since 2001 with his wife Mar Gómez. The restaurant earned its Michelin star in 2013 and holds two Repsol Soles. His casual sibling Bar Verat, opened in 2017, holds a Michelin Bib Gourmand.

Biography

Early years

Born on 17 June 1976 in Santa Coloma de Gramenet, Quintillà studied at the Escola Muntaner of Hostelery and Catering in Barcelona. He worked at Restaurant Gaudí, l'Odissea de l'Empordà, and Il Bellini, and completed a stage at El Bulli in 1997.

Career

In 2001 Quintillà and his wife Mar Gómez — head of dining room and sommelier — opened Lluerna in their home town of Santa Coloma de Gramenet. The restaurant earned its Michelin star in the 2013 Spain guide and holds two Repsol Soles. He was nominated Chef of the Year by the Gastronomic Forum in 2010 and named Best Young Chef by the Catalan Academy of Gastronomy in 2012. In May 2017 the restaurant moved to its current location, and in October 2017 the couple opened Bar Verat next door — a casual sibling that holds a Michelin Bib Gourmand.

Philosophy

Quintillà is one of the Barcelona area's longest-standing Slow Food restaurant chefs. His cuisine is rooted in the Maresme — the kitchen-gardens and coastline that surround Santa Coloma — and prioritises slow cooking, local producers, and organic and seasonal product.
