Biography

Early years

Dulcet built his career inside the network of restaurants that grew out of elBulli's closure — initially as part of the Compartir Cadaqués kitchen team from the restaurant's 2012 opening, alongside founding chefs Oriol Castro, Eduard Xatruch, and Mateu Casañas.

Career

Dulcet became the first head chef of Disfrutar Barcelona when the trio's flagship opened in 2014 — the restaurant that has since reached the World's 50 Best Restaurants top spot. After leading the Disfrutar kitchen he moved into operations and direction, becoming a partner at Compartir Barcelona when the project opened in June 2022. Compartir Barcelona is the third leg of the group's restaurant family, following Compartir Cadaqués (2012) and Disfrutar (2014). Domenico Maglione runs the day-to-day kitchen at Compartir Barcelona.

Philosophy

Dulcet's work bridges the elBulli-tradition technique he absorbed at Compartir Cadaqués and Disfrutar with the shared-plates format that defines the Compartir restaurants. The Barcelona project is designed to be more accessible than Disfrutar while drawing on the same precision and product.
