Nazario Cano is the executive chef at Árdia, a Spanish restaurant in Madrid's Recoletos area, where he reunited with head chef Víctor Vila after nine years working apart. Born in Alicante in 1973 to a family of cooks, he trained under José Manuel Varo at the Michelin-starred Delfín and later worked with Martín Berasategui, Juan Mari Arzak, Manuel de la Osa, Ferran Adrià and Alain Ducasse. He earned Michelin stars at El Rodat in Jávea in 2017 and at Odiseo in Murcia before moving to Madrid.

Biography
Early years
Nazario Cano was born in Alicante in 1973, the son and grandson of cooks. He started working in kitchens at nine, at La Goleta in Alicante, and at fifteen trained under José Manuel Varo at the Michelin-starred Delfín.
Career
He went on to work with Martín Berasategui, Juan Mari Arzak, Manuel de la Osa, Ferran Adrià and Alain Ducasse. In 2017 he earned his first Michelin star at El Rodat in Jávea, and left in 2019. In 2020 he joined Grupo Orenes' Odiseo leisure complex in Murcia as head of its gastronomic project, and the Gastronómico space he ran there earned a Michelin star in the 2021 Guide. After four years at Odiseo, he returned to the Costa Blanca in 2024 to open new restaurants around Jávea and Moraira, including one under his own name. He's now the executive chef at Árdia in Madrid, where he reunited with head chef Víctor Vila after nine years on separate paths, leading the kitchen team together.
Philosophy
At Árdia his cooking is framed as "inner fire": technique, intuition and respect for Spanish product, combining memory, territory and avant-garde cooking.
