Biography

Early years

Komuta trained in Japan in the Edomae sushi tradition before joining the Ueno group in Barcelona.

Career

Komuta took over alongside Aki Tanaka at Sato i Tanaka after founding co-chef Ryuta Sato left to open his own restaurant Sensato. The pair now lead the 16-seat counter on Carrer del Bruc in la Dreta de l'Eixample, preparing, explaining, and serving each course directly to guests in the Japanese tradition. The restaurant — owned and directed by Kenji Ueno and Neus Busquets (also of Can Kenji and Aiueno) — earned its first Repsol Sol in 2021, reconfirmed in 2025.

Philosophy

Komuta's work at Sato i Tanaka follows the Edomae register: rice temperature, careful knifework, and product over ornament. The omakase format keeps the chef in continuous dialogue with the diner, with each dish presented with its own story and technique.
