Aki Tanaka is one of the two namesake chefs of Sato i Tanaka, the 16-seat omakase counter on Carrer del Bruc in Barcelona's Eixample. The restaurant opened in 2017 under the direction of Kenji Ueno (Can Kenji, Aiueno) and carries one Repsol Sol for its Edomae-style sushi served at a single bar.
Biography
Early years
Tanaka trained in Japan before crossing into Barcelona's Japanese-restaurant scene.
Career
Tanaka joined the Sato i Tanaka counter as one of its two namesake chefs alongside Ryuta Sato when the restaurant opened in 2017. The project is directed by Mr Kenji Ueno, the owner of the influential Can Kenji and Aiueno restaurants in Barcelona. The restaurant — a single 16-seat counter on Carrer del Bruc in la Dreta de l'Eixample — has become widely regarded as one of the city's most accurate expressions of traditional Japanese sushi technique. It carries one Repsol Sol.
Philosophy
Tanaka's work at Sato i Tanaka is built around the omakase format — courses chosen and paced by the chef, nigiri pressed in front of guests, and a clean Edomae register that emphasises rice temperature, knifework, and product over ornament.
