Ryuta Sato is a Japanese itamae who co-founded Sato i Tanaka in Barcelona's Eixample in 2017 (1 Repsol Sol). He has since opened his own restaurant, Sensato, on Carrer de Septimania in el Putxet i el Farró — a smaller counter-format space carrying a Repsol Recomendado.

Early years
Sato trained in Japan before crossing into Barcelona's Japanese-restaurant scene.
Career
Sato opened Sato i Tanaka in 2017 as one of the two namesake itamae alongside Aki Tanaka — a 16-seat omakase counter on Carrer del Bruc in la Dreta de l'Eixample, directed by Mr Kenji Ueno (Can Kenji, Aiueno). The restaurant earned its first Repsol Sol in 2021, reconfirmed in 2025. Sato later left to open his own restaurant, Sensato, on Carrer de Septimania in el Putxet i el Farró — a smaller counter-format space carrying a Repsol Recomendado.
Philosophy
Sato's cooking sits squarely in the omakase tradition — the chef directs the pace, courses are revealed one by one, and nigiri is pressed in front of guests. The format emphasises rice temperature, knifework, and product over ornament.
