Juan Sahuquillo co-chefs CEBO, the Michelin-starred restaurant inside Hotel Urban in Madrid, alongside fellow Albacete chef Javier Sanz. Born in Casas-Ibáñez in 1997, the pair relaunched their family restaurant Cañitas Maite there in December 2019, won Madrid Fusión's Cocinero Revelación award and Best Croqueta in the World in 2021, then took over CEBO in October 2022. They also hold a Michelin star and a Green Star at their restaurant Oba-, back in Casas-Ibáñez. Their cooking follows a Product, Essence, Simplicity philosophy built around small-producer sourcing and precise technique.

Biography

Early years

Sahuquillo is from Casas-Ibáñez, a small town in Albacete, where he was born in 1997. He and childhood friend Javier Sanz relaunched the family hotel-restaurant Cañitas Maite in December 2019.

Career

The pair grew the project to a 54-person staff within three years and won the Cocinero Revelación (Revelation Chef) award, plus Best Croqueta in the World, at Madrid Fusión 2021 for a sheep's-milk-butter croqueta filled with hand-chopped Joselito ham. In 2022 they earned a Michelin star and a Green Star for Oba-, their restaurant in Casas-Ibáñez, the first Green Star awarded to a restaurant in Castilla-La Mancha. That October they took over the kitchen at CEBO, inside Hotel Urban in Madrid, succeeding chef Aurelio Morales; CEBO regained its Michelin star for the pair in the 2024 guide, and both CEBO and Oba- still hold a star each in the 2026 guide, alongside two Repsol Soles at CEBO.

Philosophy

Their cooking follows a stated philosophy of Product, Essence, Simplicity: natural, artifice-free cuisine built on ingredients from small producers and precise technique meant to preserve each ingredient's flavor and texture.
