Javier Sanz co-leads the kitchen at CEBO (Hotel Urban, Madrid), which holds a Michelin star and two Repsol Soles, with his childhood friend and cooking partner Juan Sahuquillo. Both born in Casas-Ibáñez, Albacete, in 1997, the pair won the Cocineros Revelación award at Madrid Fusión in 2021 and hold a second Michelin star, plus a Green Star, at their restaurant Oba- back home. They also run Cañitas Maite, La Taberñita and Eñe in Albacete alongside CEBO, which they've directed since October 2022.

Biography

Early years

Sanz and his co-chef Juan Sahuquillo were both born in Casas-Ibáñez, Albacete, in 1997 and met as children in the town. Sanz grew up inside his family's hotel-restaurant, Hotel Cañitas, where the two friends began cooking together from a young age.

Career

The pair won the Cocineros Revelación award at Madrid Fusión in June 2021; the same year their ham croqueta, made with sheep's-milk butter and Joselito ham, was named Best Croqueta in the World at the same event. In 2022 they earned a Michelin star and a Green Star, the first Green Star for a Castilla-La Mancha restaurant, for Oba- in Casas-Ibáñez, and became gastronomic directors of CEBO in Madrid's Hotel Urban that October, taking over from previous chef Aurelio Morales. CEBO regained its Michelin star for the pair in the 2024 guide, and both CEBO and Oba- still hold a star each in the 2026 guide. Beyond CEBO, Oba- and Cañitas Maite, they also run La Taberñita and Eñe in the city of Albacete, plus seasonal food trucks.

Philosophy

Sanz and Sahuquillo describe their cooking as built on "product, essence and simplicity": few ingredients and precise technique, cooking they call stripped of artifice, built around seasonal produce from their own kitchen garden and small producers around Spain.
