Early years
Mayor worked under chefs Dabiz Muñoz, Paco Morales, and Nacho Manzano before meeting Javier Goya at a restaurant in Santander, where the pair began planning what would become El Triciclo.
Career
In 2013, Mayor co-founded El Triciclo in Madrid's Barrio de las Letras with Javier Goya and David Alfonso, built around seasonal, unfussy cooking without a fixed tasting menu. As the project grew into Grupo Triciclo, Mayor went on to manage Sua and Villa Verbena within the group while Goya concentrated on running El Triciclo. David Alfonso left the partnership in July 2022; by April 2025 Mayor had also left the project, leaving Goya to run El Triciclo alone.
Philosophy
In interviews, Goya and Mayor described their approach as prioritizing spontaneity, freshness, seasonality, and flavor over pursuing Michelin recognition.
