Javier Goya is the chef-owner of El Triciclo, the market-driven Madrid bistro he opened in 2013 with Javier Mayor and David Alfonso in the Barrio de las Letras. Alfonso left in the summer of 2022 and Mayor has since departed too, leaving Goya as sole owner of a restaurant that holds 1 Sol Repsol. Career
Goya opened El Triciclo in Madrid's Barrio de las Letras in 2013 together with Javier Mayor and David Alfonso, building a bistro around the question of what restaurant they themselves would most want to eat at. The project grew into Grupo Triciclo, which also runs Villa Verbena in Casa de Campo (co-owned) and Sua on Calle de Moratín, plus a catering arm. David Alfonso left the group in the summer of 2022, and Javier Mayor has since departed too, leaving Goya as sole owner of Triciclo. In April 2025 he opened two new restaurants in Zahara de los Atunes, Cadiz: Clandestino on 10 April and Casa Candela on 30 April, working alongside chef José Fuentes. With Fuentes he also runs Tabanco la Santa and Tabanco Amores in Madrid and Burdell de Foc in Menorca.
Philosophy
Goya has said the kitchen and dining room shouldn't be run as separate worlds, favoring direct interaction between cooks and diners over a rigid front-of-house/back-of-house split. He describes adapting to the customer, rather than imposing a fixed restaurant format, as the main virtue of good service.
