David Andrés is the head chef of Via Veneto in Barcelona's Sarrià, one of Spain's longest-running Michelin-starred restaurants (continuous star since 1975) and holder of two Repsol Soles. He joined Via Veneto in 2019 after more than a decade at ABaC, where he spent eight years as chef de cuisine under Xavier Pellicer and Jordi Cruz.

Biography
Early years
Born in 1987, Andrés left his Architecture degree at twenty-one after a tasting menu at ABaC convinced him to switch tracks. He joined the restaurant's kitchen and spent more than a decade there — eight years as chef de cuisine, first under Xavier Pellicer (whom he considers his mentor) and later under Jordi Cruz. At thirty he was second chef of the two-Michelin-star kitchen.
Career
Andrés is co-owner of Somiatruites, a casual restaurant in Igualada, alongside his architect brother Xavier and his wife Zhou Mengxin, who is co-chef there. In 2019 the Monje family — owners of Via Veneto since 1967 — appointed him head chef of Via Veneto in Sarrià. The restaurant has held a Michelin star continuously since 1975 — alongside Arzak, one of the longest-running Michelin-starred restaurants in Spain — and holds two Repsol Soles. Pere Monje runs the family ownership and dining room.
Philosophy
Andrés works within the classical Catalan repertoire that has defined Via Veneto for half a century, but introduces modern technique and a select-ingredient discipline learned at ABaC. The kitchen is known for not chasing avant-garde fashion: signature dishes — like the pressed roast duck served two ways since 1967 — are maintained alongside contemporary additions.
